Yukon Gold Organic Potato is a smooth, round tuber with yellow skin and flesh, and has a pink coloring around its shallow eyes. The stems are purplish but are more green in the upper portion of the plant. This potato has an excellent flavor when baked, boiled or made into salads or fries; too moist for hash browns. If you like your fried potatoes golden brown, Yukon gold will almost turn that color by themselves! It is a moderate keeper, and drought-tolerant. The Yukon Gold potato is very popular and if you have never tried a yellow fleshed potato, this one is a must. Don't refrigerate them--doing so converts some of the potato's starch to sugar. And don't expose them to direct sunlight, which turns them green and makes them bitter. Store in a cool, dark, dry place. A root cellar, if you have one, is the best storage
