The Purple Passion Organic Asparagus (Roots) is our best tasting Asparagus variety! Asparagus is a perennial vegetable that produces edible shoots or spears which may be harvested in April-May. Purple Passion is a beautiful dark purple variety that is sweeter than standard green varieties. The plants are very vigorous and get into production in the third year with large tender spears. Asparagus can be used either raw or cooked; however Purple Passion becomes greener when cooked. Asparagus is a perennial plant that comes back from the same root system each year. A productive bed of asparagus can last 15 years or longer. It needs well-drained, deep soil and plenty of sunlight; at least 8 hours daily. It prefers organically rich soils that are evenly moist. It's an excellent source of vitamin A, and contains significant amounts of vitamin C, riboflavin, phosphorus and calcium. One cup of cooked fresh asparagus contains only 30 calories!
